Snow Day
Yesterday, mommy woke up as usual. When she was getting ready for Mimi’s breakfast, she saw the message from her email that the school was closed for the day because of the snow….
Mommy was able to stay home to work while Mimi was practicing her piano and clarinet. Our “mommy camp” started with a bounty lunch for Mimi.
Soon after lunch, Mimi and mommy were baking muffins. I love to do projects like this with mimi. This is a great opportunity for her to read and follow instruction and do things with her hands.
Mimi was greasing the baking pan with butter.
Looking for cooking oil.
Taking measurement — understanding the difference between table spoon and tea spoon.
Ready for mixing.

Pouring her batch into the cooking pan.
She then working on making the “glaze” to top the muffin. It’s pretty much mixing water with sugar powder.
She then carefully brushed the glaze on top of her muffin.
Have a taste.
Mimi said it tasted really good — better than Dunkin Donuts!! Mommy actually bagged two muffins for her snack the next day to school.

She also worked on her drawing project.
She is very methodical when working on her art piece. She knows exactly what she wants to do. (oops, please tilt your head 90 degree counter-clock wide).
Finally, it’s about time to help mommy to make dinner. The menu of the day is “lion head” — Chinese meatball. She started with washing vegetable first.
And chopping her green onion.
Seasoning with black pepper — very generously.
After mixing the ground pork with green onion, seasoning, starch, egg, and soysause, you start mixing.
Mimi was using the spoon to make the meatball into shape while trying to press the air out of the content.
Mommy only needed to show her one prototype and she is on her own, doing a pretty good job.
Our iron chef is not tall enough to reach the counter.
So this should help.

After the meatballs were formed, she started pan-fry these meatballs.
Until these turn golden.
She then cut the tofu and started assemble her pot. The bottom layer was cabbage and then top with tofu.
The meatballs were then carefully placed on the top. And then she added water and stock to simmer for another 10 minutes.
Delicious…
Someone is enjoying the fruit of her hard labor.
I will always remember, this was a snowy afternoon in the late March. But it felt really warm in the kitchen at our house. Thank you, Mimi, for the wonderful afternoon!!
